Ingredients 1/4 Cup Olive Oil 1 Small Eggplant, cut in 1" squares 1 Large Sweet Onion, sliced 2 Cans Italian Stewed Tomatoes - 16 Ounces 4 Ounces V-8® Vegetable Juice 1 Teaspoon Garlic Powder 1/2 Teaspoon Oregano 1 Pound Flounder, cut in 2" squares 1/2 Cup Parmesan Cheese, grated
Instructions 1. Add olive oil to a large frying pan. Add eggplant and onion and cook until tender, about 4 minutes, on low heat. 2. Add tomatoes, V-8 juice, garlic and oregano and simmer for 10 minutes. 3. Add flounder and bury in sauce. Simmer 5 minutes. 4. Serve with cheese sprinkled on top.
