Ingredients 8 egg, separated 2 tablespoons cold water 1 1/2 cups sugar 1 orange rind, grated 1/2 cup matzo cake meal 1/2 cup potato starch Juice and grated rind of half lemon
Instructions Sift cake meal and potato starch together. Beat egg yolks until yellow: add sugar gradually and cold water. Continue beating until light and foamy. Add lemon juice and rind of orange and lemon. Gradually add dry ingredients and blend well. Beat egg whites until stiff but not dry. Fold egg yolk mixture into egg whites. Pour into ungreased 10 inch tube pan. Bake 50 minutes in 325 degree oven. Invert pan on bottle until cold.

I have included multiple recipes for Passover Sponge Cake. Each baker thinks that theirs is the best. No matter how many I try, I always come back to this one.
Notes I like to put a small amount of the beaten egg white into the egg yolk mixture first to "lighten" it before I fold the yolk mixture into the whites. I took this picture of my cake.
