Coconut Balls


Ingredients 1/2 C. raisins 3/4 C. walnuts 1/2 C. dried dates, pitted 1/2 C. dried apricots 2 T. orange juice 1 tsp. zest of one orange 1 small bag unsweetened shredded coconut


Instructions In a food processor, process raisins, walnuts, dates and apricots for 1-2 minutes or until finely chopped. Add juice and zest and blend for 1-2 minutes more. Chill mixture in refrigerator for 15 minutes. Dampen hands, form mixture into balls, and roll them in coconut. Store balls in refrigerator


Description These just pop into your mouth much too easily. I have to put them out of sight when I make them or I would have to make a second batch.


Notes

I make these for Passover but the deserve year round serving.
