Sharon's Mother's Sponge Cake

This was written more as a story and since I hope you can get as much information and help that I did, I am sharing it as written.
Sharon's Mother's Sponge Cake - Melts in your mouth
Preheat oven to 325'
12 cup sponge cake pan
DO NOT GREASE THE PAN - IF YOU DO CAKE WILL NOT "CRAWL UP THE SIDES" AND SO WILL NOT RISE AS MUCH.
3/4 c cake meal,
1/4 c potato starch,
1/4 tsp salt
sifted together
10 eggs separated when cold then left an hour covered to get to room temperature.
Beat yolks adding 1 cup sugar very slowly until really light coloured.
Add 1/2 cup orange juice slowly and then
1/2 cup vegetable oil.
Add sifted dry ingredients to yolk mixture - combine well.
In another bowl, beat whites, until FOAMY - then slowly add 1/2 cup sugar while beating until stiff peaks form.
Then fold whites a couple of big scoops at a time into the yolk mixture, folding carefully after adding so it doesn't flatten. Be sure to get right down to the bottom of the bowl when folding.
Put into pan.
Bake at 325' for one hour and 10 minutes.
When you take it out of the oven, immediately turn it upside down and leave it like that for several hours until completely cool. When completely cool cover and put right side up into the freezer still in the pan. Freeze at least an hour or until you want to serve it. Makes it more sturdy for cutting out of the pan.
Then cut it out of the pan carefully and slowly with a long knife.
Freezes really well wrapped in foil once out of the pan, but be careful nothing else crushes it in the freezer.
Notes
Always looking for the even better sponge cake recipe, I wanted to try this although I have used a wonderful recipe - included in this collection - for years. The concepts of freezing it and bringing the separated eggs to room temperature were new to me.
The picture is before it was baked as the batter looked so marvelous. There is no picture as I destroyed it taking it out of the pan. I served it anyway as my friends and family should know that everything doesn't come out of my kitchen perfect. However, it is so incredibly delicious that people were fighting over the pieces. It rose over the edges of the pan. Next Passover, I will look for a larger pan.
