Ingredients 6 pounds flat-cut beef brisket, trimmed 3 tablespoons kosher salt 1 1/2 tablespoons cracked black pepper bottle (18 ounces) your choice of BBQ sauce
Instructions 1. Line a rimmed baking sheet with aluminum foil. This helps cooking and makes clean up a breeze. 2. Ensure the brisket is dry using paper towels, and season with salt and pepper as desired. Cover the brisket with plastic wrap and refrigerate overnight. 3. When you're ready to cook the brisket, preheat the oven th 300 degrees. Remove the plastic wrap from the brisket, and place a piece of parchment paper on top of the brisket. Then, cover the pan with aluminum foil. 4. .If desired, insert an oven-safe thermometer into the thickest area of the brisket, and place the brisket in the oven. 5. Cook for 3-4 hours, or until the thermometer reaches 200 degrees F. 6. Remove the brisket from the oven, uncover, brush with sauce, and continue baking for an hour. 7. Remove from the oven again, tent with foil, and let rest for 20 minutes before serving

Notes I made this for a 4th of July Cook-out-in when the weather forecast was not promising. The other meats were grilled in advance and all were kept warm in a low oven. How much nicer than Sumner standing at the grill with hamburgers while everyone else was eating. This will be our go to in the future. It was sliced in advance and we added extra barbecue sauce when heating.
