Tomato Bread Pudding


Ingredients 5 Cups Country Style Bread, 1" cubes Crusts Removed 1 Stick Unsalted Butter, melted 14 1/2 Ounce Can Whole Tomatoes in Juice 2/3 Cup Water 2/3 Cup Light Brown Sugar, firmly packed 1 Tablespoon Tomato Paste 3/4 Teaspoon Salt 1/2 Teaspoon Hot Pepper Sauce Such as Tabasco


Instructions 1. Put oven rack in middle position and preheat oven to 400 degrees. 2. Toss bread cubes with butter in a 13 by 9 inch baking dish until coated. 3. Puree tomatoes with juice in a blender 5 seconds, then transfer to a small saucepan along with water, brown sugar, tomato paste, salt and hot sauce. Bring mixture just to a simmer, then pour over bread, stirring to combine. 4. Bake, uncovered, until edges are beginning to caramelize, 35 to 40 minutes.


Description Just a great change from the usual.
