Ingredients
1 large bunch broccoli cut into florets
1 large cauliflower, stem removed,cut in florets
16oz frozen chopped spinach thawed or chopped baby spinach
1 medium sweet onion diced
2 Tablespoons Olive oil
1 cup mayonnaise
4 eggs cracked
1/2 cup almond flour or matzo meal
1 teaspoon sea salt
1/2 teasoon black pepper
1 teaspoon garlic powder
1 teaspoon oregano
Directions
Preheat oven to 425
Mix broccoli and cauilflower with olive oil. roast on a tray for 25 minutes. Cool for 10 minutes.
lower oven temp to 350.
Add roasted vegetables to a mixing bowl and add all the other ingredients. combine softly, careful not to break broccoli and cauliflower.
Bake uncovered for 45 minutes at 350 degrees.
garnish with smoked paprika.(optional)
Description
This just has the best flavor. Roasting the vegetables brings out their flavor while not losing the vitamins.
Servings
I made this in a 10x14 so there are about 10 hearty servings.
Notes
This is just a perfect side dish for anytime but just great for Passover. The combination of veggies is great.
