Mushroom Stuffed Meat Loaf



Ingredients 1/4 cup butter or margarine 1 pound mushrooms, sliced 7 whole mushrooms 1 teaspoon lemon juice 1 medium onion, minced 4 cups soft bread crumbs, from fresh bread 1 teaspoon salt 1/8 teaspoon pepper 1/4 teaspoon dried thyme 1/4 cup parsley, minced 2 eggs 3 pounds ground chuck 1 tablespoon salt 1/8 teaspoon pepper 1/4 cup milk 1/3 cup catchup 1 1/2 teaspoons dry mustard Currant jelly


Instructions Early in day: For stuffing, saute, in butter the sliced mushrooms with lemon juice and onion 3 min. Toss in bread and next 4 ingredients. Beat eggs; with fork, lightly mix in chuck, then next 5 ingredients. Pack half of chuck into 10x5x3 loaf pan; pack stuffing on top, then rest of chuck. Press whole mushrooms onto top. Refrigerate. About 1 hr. 25 min. before serving: Start heating oven to 400. Bake meat loaf 1 hr. 10 min. Brush top with melted currant jelly.


Description A nice surprise in the middle.

Notes

I have been making this for a zillion years. If I don't want the stuffing - or want a short cut - I just the meatloaf mix as it is one of the best around.
