Maple Mustard Salmon

Ingredients

1 large white onion, sliced thin and round

1 large red onion, sliced thin and round

1 (2-3lb) salmon, fillet, skin on

Salt, pepper, minced garlic or garlic powder and onion salt

1/2 cup good quality mustard

1/4 cup maple syrup




Instructions

Prep baking sheet or pan with parchment paper and drizzle olive oil generously.


Add onions and spread out evenly. Season with more oil and salt and pepper.


Lay salmon on top, skin side down. Season with more salt and pepper and garlic.


Combine the mustard and syrup and season with salt, pepper, garlic powder and onion powder. Brush on top of salmon.


Bake at 375 degrees got 20-25 minutes.

This is a tasty preparation where the glaze is just perfect.

Notes

I halved the recipe as it was just two of us. The salmon that I had didn't have the skin on and it still worked find. The next time that I make it, and there will be a next time, I will cook the onions for about 10 minutes before adding the salmon. They were not cooked as much as we would prefer.
