Ingredients
1 pound (500g) shrimp, peeled and deveined
salt, to taste
freshly cracked black pepper to taste
1/4 cup olive oil
1 roasted red pepper, diced
4-5 garlic cloves, grated
2 cups hot chicken broth
2-3 tablespoons lemon juice
crushed red pepper flakes
1 cup orzo pasta
2 scallions, thinly sliced
2 tablespoons finely chopped fresh parsley
feta cheese for serving
Instructions
Season the shrimp on both sides with salt and pepper.
Heat a skillet over medium-high heat and add the oil. Sear the shrimp for a minute on each side and then transfer them to a plate.
Reduce the heat to medium-low and add the orzo to the skillet. Cook until toasted. 1-2 minutes.
Add the garlic and warm through until fragrant.
Add the lemon juice and broth, diced red pepper, and season with salt and red pepper flakes. Bring to a boil.
Reduce the heat to low and cover the skillet with the lid. Simmer for 12 minutes.
Add the shrimp to the skillet and warm through 2-3 minutes.
Garnish with parsley, scallions, and feta cheese.

Notes
This is quick and delicious. I reduced the lemon juice to the 2 tablespoons but suggest even less or eliminating it.
