Lemon Meringue Pie


Ingredients 1 Baked Pie Crust 2 Packages Lemon Pie Mix 5 Eggs Sugar Lemon Juice





Instructions 1. Prepare the mix according to the directions but use 5 egg yolks. Replace 1/3 cup of water with lemon juice and increase the sugar but 1/2 cup. Put in pie crust and cool. 2. Make meringue with the 5 egg whites increasing the sugar by 1/4 cup. Follow the instructions for baking the meringue. 3. Cool and serve. Do not refrigerate or the pie will "weep".

Notes This is the way that my Aunt Kate and my mother-in-law Dorothy Sherman made the world's most wonderful lemon meringue pies. My aunt would have one ready to be picked up at her house when I was on the way home from the railroad station for college vacations, and my father always stopped so that we could pick it up. The meringue made with 5 egg whites produces a marvelous, high pie.
