Ingredients 4 pounds Chicken 1 tablespoon salt 4 quarts water 1 large onion 1 large carrot 2 stalks celery with leaves 1 bay leaf 6 peppercorns 2 tablespoons chicken fat or oil 1 medium onion, diced 2 tablespoons flour 1 cup milk or dairy substitute 1 1/2 cups broccoli, cut up 4 ounces elbow macaroni, cooked
Instructions
1. Place whole in soup pot with salt, water. Bring to boil, skim. Add next 5 ingredients. Simmer until chicken is tender (2 Hours). Cool slightly. Remove chicken, set aside, remove meat from bones.
2. Strain soup, chill, remove fat from top. Heat chicken fat, cook onion until transparent. Stir in flour, add milk or dairy substitute, 1 1/2 quarts of soup (freeze rest), broccoli; cook 5 minutes. Add macaroni and cut up chicken. Heat.
Description Chicken and broccoli and pasta in one delicious bowl.
Notes This really makes a full meal with a salad and some nice crusty, warm bread.
