Ingredients 1 pound chicken tenders (about 10-12) 1 large egg (beaten) 2 tablespoons olive oil 1 tablespoon lemon juice 1 tablespoon fresh chopped parsley (optional) 1/2 teaspoon garlic powder 1/2 teaspoon paprika 1/2 teaspoon salt 1/2 teaspoon black pepper 1 cup Panko breadcrumbs 1/2 cup Italian breadcrumbs 1/4 cup fresh grated parmesan cheese (optional)
Instructions 1. Whisk Egg, olive oil, lemon juice, parsley, and spices in a medium mixing bowl. Add the chicken tenders and mix to combine. 2. In another bowl, whisk the breadcrumbs and parmesan cheese. 3. Dredge the tenders in egg mixture then in breadcrumb mixture, turning and pressing all sides to coat evenly. Spray both sides of the chicken generously with oil. 4. Preheat Air fryer to 400F. Add chicken tenders (without overcrowding) and cook for 10 minutes, flipping halfway, until cooked through, golden and crispy. 5. To cook in batches: cook all chicken tenders in small batches. Once all tenders have been cooked, add all to the air fryer at once and heat for 2-3 minutes or until crispy and heated through.

Notes When I got the Air Fryer, my grandson told me how great the chicken tenders were when made in it. I had actually never made breaded chicken dinners before. He hadn't exaggerated. They were great. I served them with a side of tangy barbecue sauce.
