Ingredients
2-3 eggplants, about 7 inches long
1-2 cloves of garlic
Salt
Pepper
1 tablespoon lemon juice
2/3 cup mayonaise
Instructions
Pierce the eggplants and grill, bake or microwave until tender.
Remove seeds and scoop out of skin.
Put all ingredients in processor and pulse until eggplant is in small pieces.
Taste for seasonings.
Description
We fell in love with the baba ganoush - also with the hummus and Eliano who made it for us This is so very good that you start to eat it and just keep going. Add some nice pita and you have a great treat.
Notes
I grilled the eggplant on our outdoor grill. We had this at Mam's, a Glatt Kosher restaurant in Key West that is owned by Eliana. She shared the recipe with me but it is really left up to taste. Following these guidelines, you cannot go wrong. If you are in Key West, don't miss going to Mam's on Petronia Street at Whitehead Street. Everything she makes is fabulous.
