Zucchini Pie


Ingredients 4 cups zucchini, unpeeled and sliced 1 cup onion, diced 1/2 cup butter or margarine 2 teaspoons Parsley, chopped 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon garlic powder 1/4 teaspoon basil, chopped 1/4 teaspoon oregano 2 eggs, well beaten 2 cups Mozzarella cheese, shredded 1 tablespoon Dijon Mustard 1 frozen pie crust


Instructions 1. Cook Crust for 5 minutes. 2. Preheat oven to 375 degrees. 3. Cook zucchini and onions in butter or margarine til soft. Stir in parsley and seasonings. 4. In large bowl, mix eggs with cheese and add vegetable mixture. Spread mustard on pie crust and put in mixture. 5. Bake 25-30 minutes or till knife comes out clean.


Description Delicious way to use zucchini.


Notes I make this without the crust and add the mustard to the mixture. I then bake it in a buttered pie plate. I omit the salt, finding the cheese has enough salt in it. The picture is of a pie that I made.
