Spinach Salad with Apples, Pecans and Feta

Ingredients

For the Salad:

2 large apples (Honeycrisp, Fuji, or Gala), thinly sliced

½ cup dried cranberries

½ cup pecans, toasted

4 cups mixed greens (such as spinach, arugula, or romaine)

¼ cup crumbled feta or goat cheese (optional)

¼ cup red onion, thinly sliced


For the Dressing:

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

½ teaspoon salt

¼ teaspoon black pepper


Instructions

Combine all of the ingredients in a large bowl.


Combine dressing ingredients and add to salad and toss.


Description

The crispness of the apples with the other textures is delightful.

Notes

This salad is excellent. I used spinach and did add th feta since I love feta. I suggest cutting the apple slices in half to make it easier to eat.
