Ingredients Unbaked 9" graham cracker crust 2 packages 8 oz cream cheese 3 eggs 3/4 cup sugar 1 teaspoon vanilla
Instructions If preparing your own crust, refrigerate after making while preparing filling. Start heating oven to 350. In medium bowl, with mixer at medium speed, beat cheese with eggs, sugar and vanilla until smooth, scraping bowl and beater occasionally. Pour this mixture into crumb crust; then bake 30 minutes or until set. Cool on rack. Top with choice of topping. See note.

Notes The recipe calls for a very involved process with pineapple tidbits for the topping. The process took an hour and a half. The second time that I made the pie was for company, and I watched my guest pick off the tidbits, one by one as he didn't like pineapple. From then on, I made a simpler topping. Look for the recipe in this collection. Another option is to use sliced strawberries and brush them with melted currant jelly. Or, if the strawberries are beautiful, dip whole strawberries in melted currant jelly and arrange on the top of the pie. This can also be made in small muffin tins and topped with a whole strawberry dipped in melted currant jelly or any fruit topping.
