Monkey Bars

Ingredients

1 cup butter, softened

1 cup light brown sugar

1/2 cup granulated sugar

2 large eggs

3 ripe bananas

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 1/2 teaspoons salt

1 teaspoon baking powder

2 cups semisweet chocolate chips, divided


Instructions

Preheat the oven to 350 degrees F.

Line a 10x15-inch baking sheet with parchment paper.

In a large mixing bowl using an electric hand mixer, add the softened butter, the brown sugar, and the granulated sugar. Cream the mixture together until well-combined.

Add the eggs, the bananas, and the vanilla extract to the butter-sugar mixture and combine using an electric hand mixer until it is smooth.

Add the flour, the salt, and the baking powder to the banana mixture and mix with an electric hand mixer until all of the ingredients are fully combined.

Add 1 1/2 cups of the chocolate chips to the batter and stir gently until it is combined.

Evenly spread the batter onto the prepared baking sheet and sprinkle with the remaining chocolate chips.

Bake the batter until the edges start to brown and a toothpick inserted into the center comes out clean, about 25-28 minutes.

Transfer the baking sheet from the oven and allow the bars to cool.

Slice and serve.

Description

This is a great way to use those bananas that get too ripe to eat. The chocolate and banana is a super combination.

Servings

The 10x15 pan makes a good size bunch. The number of servings depends on the size you cut.

Notes

These are very moist, almost more like a thin cake than a bar. We loved them.
