Ingredients 1/2 cup sugar 1/2 cup shortening 2 eggs 1/2 cup orange juice 3 1/2 cups flour 2 teaspoons baking powder pinch salt 3 pounds apples, peeled and sliced Cinnamon and sugar mixture Lemon juice Butter or margarine
Instructions Cream sugar and shortening. Add eggs, one at a time, beating well after each. Alternately, add orange juice and dry ingredients which have been combined. Divide dough into 2 parts. Roll out one part and place in lightly greased 9x13x2 pan. Pat to fit in pan. Arrange apples over dough. Sprinkle with sugar and cinnamon mixture. Sprinkle a little lemon juice over this and dot with butter. Roll out rest of dough. Place over the apples. Seal edges well together. Brush top with milk. Sprinkle cinnamon and sugar mixture on top. Bake at 375 for 50 minutes.

Notes Aunt Kate was my father's sister and one of my favorite people. I had misplaced this recipe and was thrilled when I found it when I was going thru recipes to enter on the computer. This cake is just delicious. The dough can be tough to work with, but it is worth the effort. It is titled "Mom's Apple Cake" because her daughter, my cousin Lenore, gave me the recipe. Aha, a family recipe.....
