Matzo Farfel Cookies

Ingredients

2 cups matzo meal

2 cups matzo farfel

1 cup raisins

1.5 cups sugar

1 cup nuts, chopped

1 teaspoon cinnamon

1/2 teaspoon salt

2/3 cup vegetable oil

4 eggs

Directions

Combine dry ingredients. Add eggs and oil.

Drop by teaspoons on a greased baking sheet. Bake at 35 degrees for 20 to 30 minutes, until brown.

Let cook and harden before removing from sheet.

Description

These are a lovely Passover cookie.

Notes

There was a suggestion that chocolate chips could be substituted for the raisins. I chose to add both and the cookies were very good.

I have tried to give credit to the source of the recipe where possible.  I never dreamt when I started trying recipes and saving the ones that I liked that there would be something called the Internet where I could share them.  My gratitude to the sources where I was able to provide them and my apologies where I had no way to credit them.
