Ingredients 2 lb. Butternut squash, peeled and cut into bite size pieces 2 Tablespoons olive oil 3 Tablespoons maple syrup, divided Salt and pepper, (to taste) 1 Tablespoon chopped chives, (optional)
Instructions 1. Toss the squash cubes in the olive oil and 2 tablespoons of the maple syrup. Place on a baking dish and season with salt and a generous amount of pepper. Roast in the oven at 400 degrees for approximately 20 minutes, toss the squash and return to the oven for an additional 20 minutes or until the squash is a light golden color. 2. Spoon into a serving dish, top with a handful of chives, if desired, and drizzle with the remaining tablespoon of maple syrup.
Description A lovely way to serve this autumn vegetable.
Notes This recipe makes it so that I never want to prepare butternut squash any other way. We are fortunate to have many squash from the garden and they stay good all winter. We also peel and cut in chunks and freeze it.
