Lemon Crinkle Cookies


Ingredients 2 cups Blanched Almond Flour 1 Cup Sugar Zest of 1 Lemon Pinch of Salt 2 Large Temperature, Room Temperature 1 Teaspoon Lemon Juice Freshly Squeezed 1/4 Cup Powdered Sugar for Rolling



Instructions 1. Preheat oven to 350º F and line a baking sheet with parchment paper. 2. In a medium mixing bowl, combine almond flour, sugar, salt and lemon zest. Set aside. 3. In a separate bowl (or in your standing mixer), beat egg whites until soft peaks form. 4. Fold in lemon juice and almond flour mixture into the egg whites until well combined 5. Roll dough into 1.5 inch balls (mixture is sticky, so wet your hands to get well shaped balls). 6. Next, roll each ball in powdered sugar and place on prepared baking sheet about 2 inches apart. 7. Bake for 15-17 minutes or until tops start to crack and bottoms are slightly browned.


Description A sweet treat with a nice lemon flavor.

Notes I made these for Passover but they would be welcome any time of the year. One needn't have an excuse to make them.
