Ingredients 1 cup flour - white or whole wheat 1 teaspoon baking soda 1/4 cup peanut butter 1 egg 1/4 cup cooking oil 1 teaspoon vanilla 1 cup carrots, ground
1/3 cup honey, optional
Instructions 1. Mix dry ingredients. Add remaining ingredients and mix quickly. 2. Bake in a greased ring mod at 350 for 40 minutes. 3. Carrots may be shredded with hand grater or in food processor. Or use blender, putting in egg and oil, then adding carrots in small pieces. 4. Cake may be "frosted" with whipped low fat cottage cheese and decorated with carrot pieces. 5. Store uneaten portions in refrigerator.
