Blueberry Cottage Pudding

Ingredients 1/4 Cup Butter or Margarine 1 Cup Sugar 1 Egg 1 Egg White 2 Cups Flour 2 1/2 Teaspoons Baking Soda 1/2 Teaspoon Salt 2/3 Cup Milk 1 Teaspoon Vanilla 18 Ounces Frozen Blueberries, Unsweetened


Instructions 1. Cream the butter or margarine with the sugar. Add the egg and egg white and beat well. Sift the flour, baking powder and salt together. Add alternately to the creamed mixture with the milk and vanilla. Fold in the blueberries very gently. Turn into a greased 2 quart baking dish. Bake in a moderate oven, 350, for 50 minutes to an hour, depending on the depth of the dish. 2. Cut into squares and serve while still warm. May be served with a lemon sauce.
