Ingredients
2 bananas, ripe and smashed
1/3 cup Greek yogurt
1/3 cup butter, melted, plus more for greasing
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
salt, to taste
1 1/2 cups all-purpose flour
1/2 cup blueberries
Directions
Preheat the oven to 350 degrees F.
Butter a 4x8-inch loaf pan, then line the pan with parchment paper.-Butter the parchment paper.
In a large bowl, mix the bananas, yogurt, and butter using a wooden spoon or fork.
Add the sugar, egg, and vanilla and mix.-Sprinkle the baking soda and salt over the batter and mix in.-Add the flour to the batter and mix just enough to blend, do not overmix.
Fold the blueberries into the batter until evenly distributed.-Pour the batter into the prepared pan.
Bake until a knife inserted in the center comes out clean, about 1 hour.-Cool the bread on a wire rack in the pan.
Transfer the bread from the pan and slice.
Serve.

This banana bread made even better with the addition of blueberries.
