Ingredients 6 Tablespoons butter 1 1/4 cups sugar 2 large egg 2 cups flour, sifted 1/2 teaspoon salt 2 teaspoons baking powder 1/2 cup milk 1 pint blueberries, divided 2 teaspoons sugar
Instructions Cream butter and 1 1/4 sugar very well. Add eggs, one at a time and beat well. Sift flour, salt and baking powder together and add alternately with the milk. Remove 1/2 cup blueberries. Dry remaining washed berries very well with paper towels. Crush the 1/2 cup with a fork and mix into batter by hand. Then add remainder of berries and mix by hand. Grease top of muffin tins and line with paper liners. Fill almost 7/8 full, sprinkle with 2 Cups sugar, and bake at 375 for 30 minutes or until nicely browned. Cool for 30 minutes before removing from oven. Store uncovered or they will be too moist on the second day if there are any left.
Notes This is supposed to be the recipe used for the famous muffins sold at Jordan Marsh Department store in Boston. Whether it is or isn't, the muffins are wonderful. They are almost more like a cupcake than a muffin.
