Baked Rice

Ingredients 1/4 cup butter 1 cup long-grain rice 1/2 cup onion, chopped 2 cups chicken broth or water, boiling 2 tablespoons butter, melted





Instructions 1. Preheat oven to 375. 2. Cook onion in butter until translucent. 3. Add rice and stir until well coated. 4. Add boiling broth or water. 5. Cover and bake for 18 minutes. 6. Gently mix melted butter with rice.



Notes This is the easiest and best rice possible. You can add whatever you like.......defrosted or fresh peas, mushrooms, pepper, leftover chicken. You will never want to make rice any other way.
